It strengthens the connection between farmers and restaurateurs and provides consumers with a trustworthy guide to recognizing sustainable and regional gastronomy offers. A high proportion of the food used in the kitchen comes directly from regional producers. They are produced and processed locally, which reduces long transportation routes and associated CO2 emissions. The sourced foods are produced sustainably — this includes aspects such as organic farming, humane animal husbandry, and fair working conditions for employees.
